What is the HRC (Rockwell) hardness scale?

Provides a convenient way to compare the hardness of two materials, such as steel types. The higher the number, the harder the material. German knives usually have a hardness range of 54-58 HRC, and Japanese knives have a hardness range of 59-67 HRC.

It is incorrect to believe that the more “hertz” the better the knife. It all depends on the skill, sharpening tools and purpose.
